Kim's Chicken Quinoa Stir-fry

Hello Delicious! This is so tasty and healthy. Use whatever vegetables you have on hand and use more if you want to! To make this gluten free, just make sure you are using gluten free sauces. Number of Servings: 6

Ingredients

    3 large chicken breasts
    1 1/4 cup cooked quinoa
    3 Tbsp. olive oil
    1 can sliced water chestnuts (drained)
    2 cups broccoli (cut into small chunks)
    15-16 baby carrots (julienned)
    yellow bell pepper (1/2 cut into thin long strips)
    3 Tbsp. barbeque sauce
    2 Tbsp. honey
    1 Tbsp. tamari sauce
    1/4 tsp. sesame oil (optional)
    dash red pepper flakes
    1/4 tsp. garlic powder (or mince 2 fresh cloves)

Directions

Saute the vegetables in 1 Tbsp of the olive oil. Set aside. Cook the chicken in the remaining 2 Tbsp of olive oil. Add in the sauces, garlic and red pepper flakes. Add in the quinoa. Finally, add the vegetables. Give it a good stir and serve immediately.
