Potato-Garlic Soup

Introduction

Super easy and tasty soup. Takes about an hour to serving the finished product. Super easy and tasty soup. Takes about an hour to serving the finished product.
Number of Servings: 6

Ingredients

    2 Tbsp - Olive Oil
    1 Medium Onion - chopped
    2 large potatoes - cubed
    7 cloves of garlic - crushed
    3.5 Cups of Chicken Stock
    1.75 Cups of Milk
    1 tbsp - Lemon juice (about 1/2 lemon)
    1/4 stick of salted butter (optional - not really a diet ingredient)
    salt and pepper to taste

Directions

1. Saute onions and garlic in olive oil for about 5 minutes.
2. Add the chicken stock and potatoes, bring to a boil, then cover, lower the heat and simmer for about 15 minutes. Check to see that the potatoes are cooked.
3. Process the contents in a food processor or a power wand (my favorite a Braun) until it is a smooth mixture.
4. Return the mixture to the sauce pan and add the milk, lemon juice (and butter if desired). Stirring frequently reheat the mixture, but do not bring boil it. Salt and pepper to taste. Makes about 6 servings.
Garnish with chopped parsley.
Enjoy.
