Light Wheat Pasta

Introduction

Number of Servings: 8

Ingredients

    2.5c whole wheat flour
    1c unbleached flour
    2T water
    .5t salt
    4 large eggs

Directions

Yields 1.25 pounds of dough. Serves 8.

Place whole wheat flour, white flour, eggs, water, and salt in mixer bowl. Attach bowl and flat beater. Turn to speed 2 and mix 30 seconds.

Exchange flat beater for dough hook. Turn to speed 2 and knead 2 minutes. Remove dough from bowl and hand knead for 1-2 minutes. Divide dough into eight pieces before processing with pasta sheet roller attachment.

Cook in boiling, salted water for 6 minutes if fresh, 7 minutes if dry. Can freeze "nests" of pasta but cooking time will be longer. Simply drop the frozen nests into the boiling water.
