Amy's Slow Carb White Chicken Chili

Introduction

This is a slow-carb white chicken chili recipe. I used a variety of beans to give it more flavor and depth. I did NOT use any additional salt or pepper in this. Ingredients

    1 Tbs EVOO
    1 Large Onoin chopped
    3 cloves of Garlic chipped
    1 small can green chillies
    1 small can chopped jalepenos
    1 (15oz) can of White/Canelini Beans
    1 (15oz) can garbanzo/chick pea beans
    1 (15oz) can Hominy
    1 (45oz-large) can of Chicken Broth
    3 lbs chicken breast-cubbed

Directions

-chop onoin and garlic and sautee in EVOO until oinoins turn clear
- add chillies, jalepenos, all three cans of beans and sitr
-add chicken and stir,
-add chicken broth, and heat to boiling.
-once soup boils, reduce heat to simmer, put the lid on it and forget it for about 45-60 mins. (the longer it cooks, the more tender the chicken and the better the flavor)
-serve warm in bowls! Enjoy!
