Number of Servings: 6


    1/4 C. all-purpose flour
    4 low sodium chicken bouillon cubes
    1 tsp. dried basil
    1/2 tsp. dried oregano
    1/2 C. onions, chopped
    2 tsp. garlic powder
    1 T. canola oil
    5 C. zucchini, thinly sliced
    6 tomatoes, cut in wedges
    24 oz. boneless, skinless chicken breast, chopped into bite-size pieces
    6 C. cooked, brown rice


Combine 1 and 1/2 C. cold water, flour, bouillon cubes, salt, basil, and oregano. In large non-stick skillet or wok stir fry onion and garlic in hot oil until tender. Remove from skillet. Stir fry chicken for 3-4 minutes. Remove chicken from from skillet. Add zucchini and stir fry for 5 minutes. Add chicken, onion and tomatoes. Cook to warm tomatoes. Serve with brown rice. Makes 6 servings
