Ingredients

2 cups uncooked converted long-grain rice
1.5 lbs skinless turkey breast, cut into bite-sized chunks
2 cups lowfat, low-sodium chicken broth
1/4 cup italian parsley, chopped
1/4 cup black olives, sliced
1/4 cup onion, finely chopped
1 clove garlc, minced
1 tsp lemon zest, grated
1 tbs fresh lemon juice
1-14 1/2 oz can stewed tomatoes, undrained
1/4 cup lowfat parmesan cheese, grated
Directions
Combine all the ingredients in the slow cooker, except for the Parmesan cheese. Mix throughly. Cover; cook on low 6 to 8 hours (or on high for 3 to 4 hours). Sprinkle with parmesan cheese before serving. Makes 6 servings; 5 grams of fat per serving.
