Cod Al Forno with Roasted Tomatoes

Ingredients

3 tsp Basting Oil, divided
4 Pacific Cod Fillets (about 6 oz each)
5.5 oz Roasted yellow tomato Strips, chopped (found at the Mediterranean Bar of Wegmans - about 1 cup)
1/4 cup Pank Bread Crumbs
sald & cracked black pepper
Directions
You'll Need: Baking sheet
Preheat oven to 400 degrees.
Coat bottom of baking sheet with 1 tsp basting oil. Place cod on baking sheet; spread each fillet evenly with chopped tomato.
Combine panko and remaining 2 tsp basting oil in a small bowl; mix well. Season to taste with salt and pepper. Sprinkle fillets with evenly divided portions of crumb mixture.
Bake 15-18 min or until internal temp of cod reaches 130 degrees. (Check by inserting thermometer halfway into thickest part of cod.) Remove from oven; let rest 2 min.
