2 tsp olive oil
1 c.chopped onion
2 tsp chopped fresh oregano
4 garlic cloves,minced
3 c.chopped yellow squash
1c chopped carrot
1c fresh corn cernels
4c chopped tomato
40oz chicken broth (5 pac of Herb ox no salt low fat,mixed with 5c hot water.)
.5c uncooked ditalini pasta (or other shorter pasta)
1 15.5 oz can of cannellini beans rinsed
6 oz package of fresh spinach
1 tsp salt
.5 tsp freshly ground pepper
8 tbs grated asiago cheese
Start with the broth ; heat the water to boiling add the Herb ox chicken granules ,stir untill desolved, remove from heat.
Heat oil in Dutch oven, med.heat add onion,sautee for 5 min add the garlic and oregano,sautee 1 min.stir in the squash, zucchini,carrot and corn cook for5 more min.
Remove from heat.
Place 3 c.tomato and 2c.broth in a blender process until smooth.
Add tomato mixture to pan,return pan to heat,stir in remaining tomatoes and broth,bring to a boil.Reduce heat and simmer for 20 min.
Add pasta and beans,cook for 10 min or until pasta is tender stirring occasionally.
Remove from heat stir in spinach salt and pepper.
Ladle into individual bowls and top with 1 tbsp grated cheese.
