Chicken A la King from scratch

Introduction

Ingredients

    1 1/2 pounds boneless, skinless Chicken Breast
    1/2 cup Flour
    2 TBS Canola Oil divided
    10 ozs Mushrooms, fresh quartered
    1 large Green Peppers chopped
    1 medium red bell Peppers, chopped
    3/4 tsp Salt
    1/2 tsp Pepper, black
    1 cup Sherry,
    1 cup low sodium Chicken Broth
    1 cup low fat Milk
    1 - 4 oz jar Pimentos
    1/2 cup Scallions, chopped
    1 TBS Tarragon, ground,
    3 cloves Garlic, minced
    1/4 cup red Onions, chopped
    1 large carrot, diced.

    whole wheat egg noodles or spinach noodles

Directions

Add the tarragon to the flour and toss chicken and flour in a medium bowl until coated.
Heat 1 TBS oil in large skillet over medium heat.
Reserving remaining flour, add the chicken to the pan and cook, stirring occasionally, until lightly browned, 2-4 minutes. Transfer to a plate.

Reduce heat to medium and add the remaining 1 TBS oil to the pan. Add the mushrooms, bell peppers, red onion, carrot, garlic, salt and pepper. Cook, stirring often until the mushrooms are soft and starting to brown, 3-5 minutes.
P{our in sherry, bring to a boil and cook, stirring to scrape up any browned bits. 3 minutes.

Whisk broth and milk into the reserved tarragon flour until smooth. Stir the mixture into the pan. Bring to a simmer stirring often. Stir in pimentos and add the chicken, return to a simmer. Reduce heat to maintain a gentle simmer and cook until the vegetables are tender and the chicken is cooked through, 5-7 minutes

Stir in Scallions and serve immediately.

You can serve this over Spinach egg noodles, whole wheat noodles or with Linguine.

1 serving is approximately 1 1/2 cups OR USE COMMON SENSE.
