Hawaiian Shrimp & Macaroni

Introduction

Ingredients

    2 cups (8 ounces) elbow macaroni, uncooked (calories calculated using mini penne pasta)
    4 1/2 cups (two 12 oz packages) frozen tiny shrimp (recipe calculated using 14 oz package)
    3 tablespoons vegetable oil (recipe calculated using canola oil)
    2 cups (20 oz can) pineapple chunks (recipe calculated using 1 cup)
    1/3 cup vinegar
    1/4 cup brown sugar
    1/2 teaspoon salt (not included in calorie nutrition calculation as I don't add salt)
    1 1/2 tablespoons soy or teriyaki sauce (nutrition calculated with teriyaki)
    1 tablespoon cornstarch
    2 tablespoons water
    1 cup coarsely diced green pepper (I don't like, so not included in nutrition calculation)

Directions

Cook pasta according to package directions; drain. Meanwhile, lightly saute shrimp in oil; remove shrimp and set aside. Drain pineapple and add 1/2 cup of the syrup to skillet with vinegar, brown sugar, salt and soy (teriyaki) sauce. Bring to a boil; mix constantly until clear and thickened. Add green pepper; cook and stir until green pepper is almost tender. Stir in pasta, shirmp, and drained pineapple; heat to serving temperature. Makes 4-6 servings. Nutrition calculated based on halving the recipe for 3 servings - I did one cup. Next time, I will add shredded carrots.
