Introduction

This hearty chicken salad is super nutritious, filling and easy to prepare. I roast my almonds from raw for extra crispness, taste and nutrition. For less calories per serving, use lo-fat mayonnaise. Ingredients

    2 c. cooked chicken breast (without skin)
    3/4 c. celery
    1 c. carrots
    1/2 c. almonds
    3/4-1 c. mayonnaise
    1 T. lemon juice

Directions

Chop all ingredients in a food processor, stir in mayonnaise and lemon juice. Serving size is 1 cup.
