1 pound lean ground beef
1 medium onion
1 small green pepper chopped
.5 can red kidney beans
.5 can black beans
1 can (14.5 ounces) diced tomatoes, undrained
1 can tomato sauce
1/4 cup water
1 envelope reduced sodium taco seasoning
1 teaspoon chili powder
1-1/3 cups uncooked instant brown rice
.5 cup shreeded reduced fat Mexican cheese blend
Stir in next 6 ingrediants and cook until bubbly, add rice.
Transfer to shallow dish, sprinkle with cheese and bake in 350 oven for approx. 15 minutes.
Yield: 8 servings (1 cup servings)
Diabetic exchange: 2 starch 2 lean meat 1 vegetable 1/2 fat
