Pasta with Roasted Broccoli with Garlic & Oil

Introduction

I found this recipe on skinny taste dot com. It was awesome. I think I'm going to roast my broccoli like this from now on. I'm planning on adding grilled chicken next time. Ingredients

    8 oz Barilla Plus Pasta or other high fiber/low carb pasta
    1 1/2 lbs of broccoli florets
    6 cloves garlic, minced or finely chopped
    2 tbsp olive oil
    kosher salt and pepper to taste
    1/4 c fresh grated Pecorino Romano cheese

Directions

1. Preheat oven to 450*. In a baking dish combine broccoli, olive oil, garlic, salt and pepper.
2. Roast broccoli about 20 minutes, tossing half way, until broccoli is browned and tender.
3. While the broccoli is cooking, boil water in a large pot. Add pasta to boiling water and cook according package directions (about 10 minutes). Before draining, reserve 1 cup of the water from the pasta.
4. Drain the pasta, return to pan and toss with broccoli. Add 1/2 cup reserved water (or more if needed).
5, Plate broccoli and pasta and sprinkle Romano, salt and pepper over the top.
