Chicken with Tomato and Artichoke Hearts

Introduction

Fast and easy, yet tastes incredible! Especially great for the kick in the tastebuds! Fast and easy, yet tastes incredible! Especially great for the kick in the tastebuds!
Number of Servings: 4

Ingredients

    12 oz boneless skinless chicken breast
    1 cup dry brown rice
    2 cups frozen artichoke hearts
    1 cup sun dried tomatoes
    1 cup diced tomatoes with green chiles
    1 Tbs olive oil

Directions

If using dried sun-dried tomatoes, rehydrate them in water 1-2 hours before beginning.

1) Cook rice according to package directions
2) Heat oil in skillet over medium-high heat. Add chicken and cook 1 minute per side - until golden brown.
3) Remove chicken from pan, and set aside.
4) Add diced tomatoes to pan, and simmer one minute, stirring constantly.
5) Stir in sun-dried tomatoes and artichokes. Return chicken to pan. Cover and simmer 5 minutes, until chicken is cooked through.
6) Serve over rice.

Makes 4 servings.
