Introduction

Perfect quick and easy lunch for one. Add a veggie on the side for a complete meal. Perfect quick and easy lunch for one. Add a veggie on the side for a complete meal.

Ingredients

    3/4 cup cooked brown rice (can be leftover rice from the day before)
    1 large egg
    1/2 cup snap peas
    1/2 cup fresh spinach
    1 tbsp bacon bits
    1 tbsp teriyaki sauce
    1 tsp soy sauce (opt)

Directions

Spray pan with Pam, scramble egg, add in peas and bacon bits, for 1-2 mins. Add spinach, rice, and sauces. Stir fry for 1-2 minutes until rice is hot.
