Oriental Tofu Soup - homemade

Introduction

Similar to miso soup. Soth Beach phase 1 friendly. Similar to miso soup. Soth Beach phase 1 friendly.
Number of Servings: 2

Ingredients

    1/2 block tofu, cubed
    2 tsp ginger root, minced
    2 cloves garlic, minced
    1 tbsp peanut oil
    1 large mushroom, diced
    1 sm stalk celery, diced
    Greens from 3 outer bok choy leaves
    4 c water
    1 tsp lite soy sauce
    1/2 tbsp oyster sauce
    1/2 tbsp fish sauce
    4 small scallions, diced

Directions

Saute ginger and garlic in peanut oil to release flavors. Add tofu and cook for 3 mins. stirring occasionally. Add mushroom and celery, cook for 1 min. Add water, bring to boil. Add bok choy, soy, oyster and fish sauces, and then simmer for 5 mins. Add diced scallions to bowl when serving. Serves 2.
