Turkey Spinach Meatballs

Introduction

My husband hates vegetables. He asks for these, often. They can either be over pasta or on heroes. We usually have them with some provolone an on a wheat roll. My husband hates vegetables. He asks for these, often. They can either be over pasta or on heroes. We usually have them with some provolone an on a wheat roll.
Number of Servings: 5

Ingredients

    1 lb 94% fat free ground turkey
    1 tbsp olive oil
    10 oz frozen spinach, thawed and drained of liquid
    1/2 cup bread crumbs
    1 large egg
    2 cloves garlic
    2 tbsp dried parsley
    1/2 cup grated parmesan cheese

Directions

Add all ingredients to bowl. Combine until well mixed, using a fork or your fingers. Line a cookie sheet with foil or parchment paper. If using foil, spray lightly with olive oil spray. Roll 30 small meatballs, or 15 larger ones. Heat oven to 425, cook for 18-20 minutes until meatballs are brown and cheese is leaking out. Makes 5 servings, 3 large or 6 small meatballs per serving. Larger meatballs are perfect for meatball heroes, smaller ones go well with pasta.
