EASY Baked Honey Dijon Chicken

Introduction

Easy Weeknight meal ... prepare chicken the night before, throw in fridge and then it only takes 20 minutes in the oven (while you micro your rice & throw a salad together) to have supper ready ! Easy Weeknight meal ... prepare chicken the night before, throw in fridge and then it only takes 20 minutes in the oven (while you micro your rice & throw a salad together) to have supper ready !
Number of Servings: 7

Ingredients

    - 3 TB Honey
    - 3 TB Dijon Mustard
    - 2 TB Olive Oil
    - Salt & Pepper (not in nutritional info)
    - 30 oz of boneless skinless chicken breast (4 breasts)
    Cut in half & flattened

Directions

Combine honey, mustard, oil, salt & pepper in a ziplock bag.
Add chicken and shake around until chicken is well coated.
Place in fridge for at least 30 minutes (up to 24 hours).
Place on a cookie sheet lined with parachment paper.
Bake in oven (375 degrees) for apprx. 15-20 minutes (just until chicken is no longer pink).

Serve with brown rice & salad.
Makes apprx. 7.5 x 4oz servings.

  • Is a slight variation of how I do it. It is so easy, so simple, and so good. I typically by-pass the Honey and use a slight coating of Bread crumbs, but, either way will make the family, and heart feel good. - 8/25/11
