Ingredients

    5 boneless, skinless chicken breasts cut into bite-size pieces
    1 T. Corn Starch
    1/4 c. low-sodium Soy sauce
    2 T. Brown Sugar
    2 t. Sesame Oil
    1/2 t. black pepper
    1 t. dried red pepper flakes
    2 cloves garlic
    1 t. vegetable oil
    1 small head Cauliflower, chopped into bit-size pieces
    1 c. Mushrooms, sliced
    1 c ) Asparagus, cut into 1-inch pieces
    1 c. Carrots, cut into 1-inch julienne strips
    1/2 cup green onions, chopped
    1/2 t. salt
    3 c. long grain white Rice, prepared


Directions

Combine chicken pieces with next 7 ingredients in a zip top bag. Seal bag and coat chicken. Let chicken marinate for 20-30 minutes. Heat oil in large skillet on med-high heat. Brown chicken pieces in batches until all pink in gone. Reserve marinade. Add carrots and cauliflower to chicken and cook for 5 minutes. Add mushrooms and asparagus and continue to cook for 5 more minutes. Add salt and black pepper to taste. Pour reserved marinated over chicken and vegetables and cook for 10 minutes or until vegetables are tender and sauce is thickened. Serve with hot white rice.
Makes 6 1-cup servings (with 1/2 cup rice)
