Spicy Cucumber Salad

Ingredients

    2 cups cucumber, peeled, seeded, thinly sliced
    1 cup red bell pepper, julienned
    1/4 cup red onion, thinly sliced
    1 tbsp sugar
    2 tbsp lime juice
    1 tbsp fish sauce
    1/2 tsp crushed red pepper

Directions

In a medium bowl, combine sugar, lime juice, fish sauce, and crushed red pepper. Whisk until sugar melts. Toss the remaining ingredients in the dressing and serve.

Makes 6 (1/2 cup) servings
