Lori's low carb pancakes

Introduction

in searching for an induction-acceptable recipe I came up with my own. in searching for an induction-acceptable recipe I came up with my own.
Number of Servings: 2

Ingredients

    1 raw egg (beaten)
    1/2 cup water
    1/4 cup heavy cream
2 scoops soy (or other) no carb protein powder
    1 packet (or teaspoon) splenda
    1 teaspoon baking powder
2 pats butter (to grease pan, use a little at a time)

Directions

Heat a pan [or griddle] until hot enough for a drop of water to sizzle on it. Reserve butter for coating the pan or griddle - do not use it in your batter. Meanwhile, add dry ingredients to wet ingredients and mix by hand (gently) until smooth {do not overmix or batter will not fluff up). Coat your griddle or pan with a pat of butter and pour out batter to make four inch pancakes. I used one pat of butter for every three pancakes and they did not stick to the pan. Pancakes will puff up so remember to turn them so they cook on both sides and also in the middle (no "raw" pancakes). This is sooooo good!!!
If you are allowed enjoy them with some raspberries on the side and maybe a little sugar free syrup [but not necessary since they taste sweet enough].
enjoy!! :)
makes 6 pancakes = 2 servings of three pancakes per person
