1 12 inch link chorizo
1 onion, chopped
2 carrots, chopped
~5 medium potatoes, chopped
2 stalks celery, chopped
1 can red kidney beans, drained
1 can black beans, drained
1 can cannelini beans, drained
1 can crushed tomatoes (i used the ones with mild chiles included)
1 quart chicken broth, plus 1 can (if more liquid is needed)
1T Italian seasoning
2 Bay leaves
When chorizo is cooked, add chicken broth, carrots, celery, beans, tomatoes & seasonings and bring to a boil.
Add potatoes and lower heat to simmer, leave covered on simmer for 30 minutes to an hour, until celery, carrots and potatoes are soft.
Makes 16-20 one cup servings. Yum!
