Curried Pumpkin Apple Soup, 1 cups/svg

Number of Servings: 10

Ingredients

    1 lg onion, chopped
    2 apples, chopped
    4 tsp olive oil
    1 Tbsp curry powder (S&B Oriental Curry Powder is the best tasting I have found)
    1 lg (29 oz) can Libby's pumpkin
    4 Cups low sodium chicken broth (Pacific Natural is the lowest in sodium I have found)
    2 cups water
    2 Tbsp heavy cream

Directions

Makes 10 1-cup servings.

Chop onions and apples. Saute onions and half the apples in olive oil. Add Curry powder, Stir til fragrant. Add pumpkin. Stir. Add broth a little at a time, stirring. Bring to boil. Reduce heat and simmer for 10 minutes. Add remaining apple. Stir. Puree in blender. Return to pot, stir and heat over low heat. Serve with half a teaspoon of cream drizzled in a swirl on top.
