Number of Servings: 24

Ingredients

    Egg, fresh, 24 large
    Spinach, frozen, 1 cup
    Turkey bacon, 4 slices
    Mushrooms, fresh, 8 large
    Scallions, raw, 0.5 cup, chopped
    Milk, 1%, 1 cup
    2 % cheddar cheese, 0.5 cup
    Parmesan Cheese, grated, .25 cup

Directions

Defrost frozen spinach and cook bacon. Chop bacon and mushrooms to bite size. If making this recipe in muffin tins or mini loaf pans, separate the veggies and bacon in the individual pans. Put all veggies and bacon in first, then add eggs. Top with scallions, and cheese. Bake in 350 oven. Muffin tins or mini loafs take about 30 mins. A large casserole dish takes about an hour to bake. This makes 12 mini loaf pans, 24 muffin tins or one large casserole dish. (About 24 servings)
