Thai Chicken Toss

Ingredients

    24 oz chicken breast
    1/2 cup chicken broth
    1/2 cup light soy sauce
    4 Tbs peanut butter
    2 Tbs lime juice
    2 tsp grated ginger
    1 tsp crushed red pepper
    1 large red pepper
    6 scallions
    1/2 cup cilantro

    Cut chicken into bite-sized pieces. Spray pan with cooking spray, and cook chicken. Remove from pan. Pour broth, soy, peanut butter, lime juice and crushed red peppers into pan; bring to a simmer. Return chicken to pan, add in red pepper, scallions and cilantro; heat through. Serve over pasta.
