Black Bean Oatmeal Burgers (Vegan and Gluten Free)

Introduction

I substituted Bob's Red Mill Gluten Free oats and they turned out great! These burgers have a light texture, and pack a lot of flavor. I substituted Bob's Red Mill Gluten Free oats and they turned out great! These burgers have a light texture, and pack a lot of flavor.
Number of Servings: 9

Ingredients

    1 15 ounce can black beans, drained and rinsed
    1 14.5 ounce can diced tomatoes, drained
    1 cup fresh cilantro of parsley leaves
    1 garlic clove, minced
    1 teaspoon ground cumin
    1/2 teaspoon salt
    2 green onions
    2/3 cup chopped carrots
    1.75 cups rolled oats (gluten free or regular)


Directions

1. Preheat oven to 400 F. Line a baking sheet with cooking parchment and brush parchment with a bit of oil.

2. Process the first 8 ingredients until blended. Transfer to a bowl and mix in the oats.

3. Form into 9 patties and place on baking sheet. Bake for 10-15 minutes until firm to the touch. Carefully turn patties over and place uner the broiler for 1 - 2 minutes until browned.
