White Chicken Chili

Ingredients

    1.5 lbs. boneless, skinless chicken breast
    2 cups chicken stock
    2 cups water
    1 jar Herdez Salsa Medium
    1 onion, chopped/diced
    1 tablespoon cumin
    1 teaspoon cayenne pepper
    1 clove garlic, minced
    2 cups (cooked) white beans

Directions

Makes 6 1-cup servings
1. Boil chicken breasts in stock/water until cooked through, about 20 minutes
2. Remove chicken from water to cool & reserve 3 cups of broth water
3. Microwave onions 2 minutes on high
4. Shred chicken with a fork
5. Add all ingredients to reserved broth water and simmer for approximately 30 minutes
