Simply Scrambled Eggs

Introduction

Watching our fat intake is a worthwhile effort. This recipe reduces the amount of oil that is used. Substituting 2 of the eggs with equal amounts of egg white will reduce the cholesterol levels as well.

Number of Servings: 4

Ingredients

    Egg, fresh, 4 large
    Non-fat Plain yogurt - 2 Tbsp
    Poultry seasoning, 1 tbsp
    Salt, 2 tsp
    Pepper, black, 1 tsp
    Rosemary, dried, 1.5 tsp
    Parmesan Cheese, grated, 2 tbsp
    Canola Oil no stick cooking spray, 1 spray

Directions

4 servings (1 egg/serving)

Break eggs into medium-size mixing bowl. Add yogurt and spices and whisk together. Save parmesan cheese till the end of cooking.
Pre-heat frying pan on medium heat. Spray pan with 1 second spray of cooking oil and add egg mixture.
Gently stir eggs to allow thorough cooking. When firm, top with parmesan cheese and cut into two portions.
Serve warm.
