Ingredients

    2 tablespoons sugar
    2 tablespoons salt
    2 tablespoons brown sugar
    2 tablespoons cumin, ground
    2 tablespoons chili powder
    2 tablespoons freshly cracked black pepper
    1 tablespoon cayenne pepper
    4 tablespoons paprika
    2 3-pound racks of baby back ribs
    Can of beer
    Your favorite barbecue sauce

Directions

Mix the first 8 ingredients (all the spices) in a container to create the rib rub.

Rub the spice mixture into both sides of the ribs. Wrap them in plastic tightly and refrigerate overnight.

Start your grill a good 6 hours before dinner, raising the temperature to 220-240 and making sure all the coals are on one side of the grill, or in the smoker area. Remove the ribs from the fridge and let them rest on the counter for 30 minutes prior to putting them on the grill. When ready, remove the plastic, and lay the ribs on the grill away from the coals. Open the can of beer and put it on the grill over the coals. It will provide moisture and taste.

Leave everything alone except for checking the temperature and adding more coals as necessary to maintain the 220-240 degree heat.

In the last 20 minutes, slather your favorite barbecue sauce on the ribs and move them over the coals, removing the can of beer. Continue to slather and flip the ribs until the sauce has carmelized and bubbles.

Serve with many napkins.
