Ingredients

1 cup quinoa
1 can black beans
1 can rotel
red wine vinegar to taste
Directions
Bring 2 cups of water to a boil, add quinoa, cook for 20 min or until water is absorbed and quinoa has a rice-like consistency. Add drained beans and drained rotel. Add vinegar to taste.
