Betty's Healthy Meatloaf

Number of Servings: 9

Ingredients

    Ground Turkey, 99% lean, 16 oz
    Ground beef, extra lean 96%, 16 oz
    Oats, .75 cup
    Egg, fresh, 1 large
    Basil, .5 tsp
    Salt, .5 tsp
    Pepper, black, .5 tsp
    Oregano, ground, .5 tsp
    Diced Tomatoes, S&WOrganic Ready-Cut canned, 14.5 oz

Directions

1)Preheat oven to 350.

2)Strain tomatoes and reserve juice.

3)Mix juice and all other ingredients except strained tomatoes in large bowl.

4)Place in loaf pan and shape into rounded loaf.

5)Bake for 55 minutes or until juice runs clear.

6)Top with 1/4 cup of tomatoes mixed with oregano and basil to taste. Bake for another 5 minutes.

7)Makes 9 slices.

Heat rest of diced tomatoes and serve along with meatloaf.
