Fiber Rich Lentil Soup

Introduction

Good fiber rich soup ;great choice for anyone who wants to lower cholesgterol, reduce risk of colon cancer and lose weight Good fiber rich soup ;great choice for anyone who wants to lower cholesgterol, reduce risk of colon cancer and lose weight
Number of Servings: 6

Ingredients

    1 lb dried lentils
    1.5 C chopped carrots
    1 C chopped onion
    1 C chopped celery
    .25 t ground thyme
    1 bay leaf
    1 pinch cayenne pepper
    salt and pepper to taste
    garlic(optional)
    8 C water

Directions

Makes 6 servings.
Wash lentils.
Put all ingredients in large pot
Bring to boil, then reduce heat and simmer for about 40 minutes (until Lentils become tender)
Blend in blender in batches, until soup is smooth or use immersion blender
season with salt and pepper to taste
