Grandma's Cherry Soup

Introduction

This is an old family recipe, which in our family, was served as dinner, not dessert. I indulge in this occasionally and I love it. This is an old family recipe, which in our family, was served as dinner, not dessert. I indulge in this occasionally and I love it.

Ingredients

    2 large eggs, separated
    1 cup all-purpose flour
    1 cup non-fat milk
    2 T. butter
    1 (15 oz.) pitted tart cherries
    3 c. water
    3/4 cup white sugar
    pinch of salt

Directions

Put egg whites in a 1-cup measure and fill to 1-cup line with milk. Pour into saucepan. Add 1 cup flour and 2 T. butter. Stir well over heat until thick and smooth. Cool this mixture before proceeding. After cooled, stir in yolks and a pinch of salt.

In medium pot, combine undrained can of cherries, water, and sugar. Heat until simmering (low simmer). Drop batter into hot cherry broth by teaspoonsful. Cook 8-10 minutes.
