Soft-baked Oatmeal Chocolate Chip Cookies

Introduction

Because my mother is a whiner, and hates raisins. Because I am a push-over, and I complied. Ingredients

    1 cup butter, softened
    1 cup firmly packed brown sugar
    1/2 cup granulated sugar
    2 eggs
    1 tsp. vanilla
    1 1/2 cups flour
    1 tsp. baking soda
    1 tsp. cinnamon (optional, depending on your tastes - but included in tracker)
    1/2 tsp. salt (optional, but included in tracker)
    3 cups dry oats, suitable for baking (like 'Quaker')
    1 cup (about 6 oz. or 175 g) chocolate chips

Directions

1. Preheat oven to 350 degrees F.
2. Beat butter, granulated sugar, and brown sugar in a large mixer bowl until creamy.
3. Add eggs and vanilla; beat well.
4. Add combined flour, baking soda, cinnamon, and salt; mix well.
5. Stir in oats and chocolate chips; mix well.
6. Use a 1 1/2 tbsp. measure for each cookie, and drop onto ungreased cookie sheets.
7. Bake in preheated 350 degrees F oven for 10 to 11 minutes, or until golden brown.
8. Cool 1 minute on cookie sheet; remove to wire racks to cool completely.
- Makes 3 dozen (36) nice-sized cookies.
- If portion control is exercised, these are a nice treat, and bake up soft and moist - perfect with a glass of milk or mug of tea / coffee! :)

  • Not as tasty as "Quaker Soft Baked Oatmeal Cookies" (which has more than 30 ingredients) but good and healthy enough for breakfast or a snack.
    I used whole wheat oat flour and added almonds to the mix. - 2/7/13
