Chicken in a Garden

Ingredients

    3 boneless, skinless chicken breasts
    1/2 t. garlic powder
    3 T olive oil
    2 T soy sauce
    3 T cornstarch
    1/3 t salt
    1/4 t black pepper
    3 small green peppers
    1 cup sliced celery
    1/2 c. scallions or green onion
    1 (6 oz) pkg sugar snap peas
    1/4 t sugar
    1/8 t ground ginger
    3/4 c. chicken broth or boullion
    3 med. tomatoes peeled and cut in 8 wedges

Directions

Cut chicken into 1 " pieces and set aside. Combine garlic powder, 1 Toil, 1 T soy sauce, 1 t cornstarch, salt and pepper. Mix with chicken and place in refrigerator for 20 minutes.
Pour remaining oil in preheated wok (high heat). Add green pepper and stir fry 4 min. Add celery, scallions, and pea pods and stir fry 2 min. Remove veggies and set aside.
Combine remaining soy sauce, cornstarch, sugar, ginger and boullion and set aside.
Add chicken to wok and stir fry until chincken no longer pink. Add veggies, tomatoes and boullion mixture and stir fry for 3 min or until thick and bubbly.
Serve over rice.
