Introduction

Number of Servings: 12

Ingredients

    1 pound smoked turkey sausage
    2 tbsp canola oil
    1 large onion, diced
    1 yellow or red bell pepper, seeded and
    diced
    2 cloves garlic, minced
    1 bunch green onions, sliced, green part
    reserved for garnish
    1⁄2 tsp red pepper flakes
    1 tbsp dried oregano
    1 tsp fresh thyme, or pinch dried
    Pinch of salt
    1 tsp black pepper
    Three 15-ounce cans of kidney beans,
    drained and rinsed
    One 14.5-ounce can diced tomatoes with
    basil and garlic
    1 bay leaf, whole
    1 cup brown rice, uncooked
    Hot sauce to taste

Tips


Directions

1. Slice the sausage links in half lengthwise and
then in half again. Cut crosswise to dice.
2. Heat the oil in a large Dutch oven or heavy
saucepan with lid. Once hot, add the onions,
bell pepper, garlic, and the white parts of the
green onion. Cook until the vegetables are soft,
about 5 minutes.
3. Add the sausage to the pan and cook just
until browned. Add the red pepper, oregano,
thyme, salt, and black pepper and stir to combine.
Then stir in the beans and tomatoes, and
add the bay leaf.
4. Add the rice, stir, and let cook for 1 minute to
coat the rice. Add 1½ cups of water. Bring to a
boil and immediately reduce to a simmer. Cover
and continue to cook until the rice is tender,
about 40 minutes. Before serving, remove the
bay leaf and garnish with a dash or two of hot
sauce, if desired, and the sliced green onions.

    By replacing the kidney beans with dried red beans, increase water to 7 cups, add 3 T Creole seasoning and cook in a crock pot for 7-8 hours, it significantly reduces the calories and carbs. I make my own Creole seasoning so I can reduce the salt content. Serve with celery. - 10/9/09

    I needed to do a few tweaks myself. Had to drain and rinse my canned beans since liquid was mostly corn syrup. With 1 cup of water and 1 cup of rice, there's was not enough liquid to cook the rice; added another cup of water. Brown rice needs add'tl 20-30 minutes to cook. Seasonings great, tho! - 8/16/09

    My only comment is-why do people feel the need to comment negatively when they haven't tried and aren't interested in the recipe? If you don't like some of the stats/ingreds. then swap them or don't make it, no need to be snarky. - 1/5/10

    This was really good. My hubby to be is a big red beans and rice fan so I was worried he wouldn't be up for a healthier version. But he really liked it. I did add a little more seasoning such as cumin to punch up the flavor just a little. My rice took longer than 25 minutes it was more like 40min - 10/17/09

    This was amazing. I made two changes, I only used 2 cans of beans and added another cup of water. It was great. My husband doesn't like turkey sausage and was skeptical, however, the flavor and seasonings were just right and he wants to add this to our rotation. - 1/29/10

    LOVED this! OMG this was so delicious. We did use less oil and used roasted red pepper chicken sausage... which cut out about 20 calories/serving. I'll also omit the salt next time. This will be in our regular rotation. Thanks! - 2/9/10

    YUM!! I grew up in New Orleans and this dish is great! I drained and rinsed the kidney beans, used a stem of fresh thyme, added 1 tbsp of creole seasoning, increased the water to 1 1/2 cups and cooked for 4 hours on low. I added peppers at last 30 minutes so that they wouldn't get bitter. - 1/8/10

    Sounds great. I'd use "no salt added" beans and tomatoes to reduce the sodium, which is very high in the recipe as listed. - 10/9/09

    I made it without the sausage. I started with dried beans, cooked them separately until they were almost done. I put it all together with brown rice and added 2 C of chicken broth to cook the rice. It came out great! - 4/6/10

    The beans were so good! I did double the red pepper and used Rotel tomatoes with chilis since that is what I had. I cooked the brown rice separately. We didn't like the turkey sausage very much, so I'll be looking for a low-fat substitute with a little more umph. - 3/24/10

    I was at Mardi Gras one year and tasted red beans and rice, It was very good, but I couldn't find a good recipe for it. I just found one! It was my first time makin' it, but it sure was good. I also used dried beans and fresh herbs. - 1/11/10

    My husband ate it without complaining, although this is not his "type" of food. I have vowed to eat healthier this year and drag my husband along kicking and screaming. I thought it was good, not great. The brown rice takes a lot longer to cook than the recipe says. - 1/4/10

    This is wonderful, and my husband will even eat it! I added some low sodium V8 juice to make a soup for mine, and my husband made ate it as is. Oh, and I increased the red pepper pepper flakes because I like the spicy heat! - 1/3/10

    Sounds like a great recipe for the upcoming colder days. To use low sodium beans and tomatoes is a good idea but, I would like the turkey sausage, since most of my soups have some kind of meat in them, if consumed as a main meal. - 10/9/09

    My husband and I adore this. It is even better left-over! The only thing we change is we add 1 cup of chicken broth, for a total of 2 cups of liquid, and we use the instant brown rice so that it doesn't take so long to cook. DELICIOUS! - 4/15/10

    I made this recipe on 2/13. I had the feeling that the brown rice would not properly cooked when I added it to the mixture. True. After 45 minutes, the rice was still hard, uncooked. Ended up serving it over white rice, cooked separately. excellent flavor. Best served over brown rice cooked se - 2/15/10

    We are not in to HOT , I looked at this recipe and put in all the vegetables but only the basic spices. I did use fresh tomatoes and halved the recipe.     On a timing note, it took over 45 min. for the brown rice to cook. No matter though, we weren't in a hurry and the results were worth waiting for! VERY tasty meal and the leftovers will make easy lunches for a while. - 2/5/10

    Made this for dinner tonight. It was very tasty, but it did take a long time to cook - the rice was still hard, even after 30 minutes. Next time, I will have to let it cook longer, but I will definitely make it again. - 12/14/09

    I'll try this but using organic kidney beans will reduce the sodium and use a can of "no salt added" diced tomatoes with a tsp of dried basil and 2 cloves of minced fresh garlic instead of the suggestion. I'm also omitting the thyme and bay leaf because I don't like that flavor in beans. - 10/9/09

    I tried this and it was delicous. I used dried pinto beans because that is what I had on hand and added 7 cups of water to it. I would like to try it again using the red beans. I fixed it on a Monday and ate it all week. I hate fixing a meal just for me so I try a recipe and eat it a week long. - 2/17/10

    not bad. we don't like brown rice so we used white and threw some extra onions in. I find it hard to figure out how much to eat for the nutrient count. I am hard pressed to dish out 12 even portions when all I want is one for me and the rest go to the nondieters. - 2/5/10

  • Very good. Something missing but not enough to make me dislike it. If serving kids you may want to cut the red pepper in half. I used chicken smoked sausage and served with corn bread. Left out the green onion, didn't have it. I will make this often. - 8/9/11
