Ingredients

    3 oz light cream cheese
    1 c skim milk
    Egg substitute equivalent to 4 eggs
    1/4 t pepper
    3 c (12 oz) shredded reduced-fat cheddar cheese
    1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
    1 c frozen chopped broccoli, thawed and well drained
    1 small onion, finely chopped
    5 fresh mushrooms, sliced

Directions

In a small mixing bowl, beat cream chesse. Add milk, egg substitute and pepper; beat until smooth. Stir in remaining ingredients. Transfer to a 10 inch quiche pan coated with nonstick cooking spray. Bake at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. Yield 8 servings
