Ingredients

Chicken Breast, no skin, 8 ounces - diced
*zuccini, 2 small
Carrots, raw, 2/3 cup, grated
Onions, raw, 1/4 cup, chopped
Celery, raw, 1/2 cup, diced
Peanuts, dry-roasted 1/8 cup
*Crisco Pure Vegetable Oil, 1 tbsp
Sesame Oil, 1/2 tsp
Kung Poa Sauce - Panda Express - 4 tbls
Minute Rice, 2 cup
Directions
Prepare Minute Rice according to package directions. Slice / chop zuccini, carrots, onions & celery. Heat oil in the skillet, Brown chicken in oil, remove chicken from hot pan. Stir fry veggies with 4 tablespoons of water until cooked. Add chicken, peanuts and Kung Poa sauce. Mix until everything is coated with Kung Poa Sauce. Serve hot, over rice.
