Alton Brown's Baked Macaroni and Cheese.

Introduction

My revision removed 4 Tbsp. of the Butter , used Whole Wheat Rottini Pasta instead of the Elbow Pasta, and left off the Panko Crumbs. Found it totally over-done with it. Ingredients

    1/2 lb. Rotini or Elbow Pasta.

    2 Tbsp. Butter

    3 Tbsp. Flour

    3 Cups. 2% Milk or Carb Hood.

    1/2 Cup, chopped Raw Onions or desired amount of dried Onion Flakes.

    1 Tbsp. Powdered Mustard

    1/2 tsp. Paprika

    1 Egg

    12 oz. Shredded Cheddar Cheese

    1/2 tsp. Salt

    PAM or oil to grease baking dish, to prevent sticking to the pan.

Directions

Preheat Oven to 350 degrees.

Boil Pasta in large pot with salt to Al Dante, remove from stove; drain and rinse the pasta with cold water and set aside.

Rinse the Boiling Pot well, replace on hot stove burner and melt the butter. Whisk in the flour and mustard and keep whisking to prevent lumps for about 5 minutes. Stir in the milk, onions, paprika, and whisk well to incorporate and prevent burning! Simmer for about 10 minutes, whisking now and then to prevent sticking or burning.

Temper in the egg in the above ingredients, whisking the egg first and then whisking as its incorporated into the mixture and add the salt and pepper, then the cheese, keep whisking until the mixture is melted and smooth. Add the cooked Pasta and gently fold into the sauce until well coated.

Pour into the prepared baking dish and bake 30 minutes or until well set and bubbling hot. Remove from the oven and let rest 5-10 minutes before serving.
