Introduction

Number of Servings: 9

Ingredients

    Onions, raw, .5 medium chopped
    Canola Oil, 1 tbsp
    Vegetable Broth, 2 cup
    Potato, raw, 4 cubed
    Garlic, 1 clove
    Dill weed, fresh 2 tsp
    parsley 2 T
    Pepper, black, .125 tsp
    Salt, 1 dash

Directions

Saute onion in oil. Add stock, potatoes, garlic, and dill.
Cook until potatoes till soft, then puree in blender till potatoes are smooth. Add seasonings and parsley.

Makes 3 cups

Try it on Broccoli, chard, brussel sprouts, etc.
