Introduction

This sauce is made without the traditional anchovies but it loses nothing in the flavor. The olives, capers and tomatoes have plenty of salt so don't add any extra. Number of Servings: 4

Ingredients

    Tomatoes, red, ripe, canned, whole, no salt added, 15 oz can
    Garlic, 2 cloves chopped
    Kalamata, Green Olives, pitted, 4 oz
    Onions, raw, 1/2 large, chopped
    Capers, canned, 1.5 tbsp, drained
    Basil, dried, 2 tbsp
    *Dried Oregano, 2 tsp
    *Chili pepper, red, dried, 1 tsp
    Olive Oil, 1 tsp

Directions

Make 4 servings ~ 1/2 cup each

Heat oil in pan over medium heat. Saute onions ~ 5-7 minutes, add garlic and saute for another 5 minutes. Add olives, capers, chili pepper flakes and tomatoes and stir. Allow sauce to come to a slow simmer for 10 minutes. Tomatoes can be broken up in the sauce or prior to adding but leave sauce a bit chunky.
Add basil and oregano at the end of simmer.
Serve over pasta, fresh bread, vegetables...whatever your little heart desires.
