Dewey's Pizza Dough

Introduction

Number of Servings: 2

Ingredients

    1.5 cups water warm (110 degrees)
    2 1/4 tsp dry active yeast
    2 tbsp sugar
    2 tbsp olive oil
    4 cups bread flour
    2 tsp salt

Directions

Add water, yeast, and sugar to a heavy duty mixer and let rest for 5-10 minutes. Yeast should form head.
Add flour, oil, and salt. Mix for about fifteen minutes and then place in a greased bowl covered in the refrigerator for a day. Punch the dough down if it starts to pop out of the bowl. Bring to room temperature before forming into balls. Form two balls for thicker 14" crusts. Form four balls for really thin 12" crusts. If you like a thin crispy crust, roll the dough out on a floured surface with a floured rolling pin. Pre-bake at 500 on a baking stone for 3-4 minutes before topping. For a thicker chewy crust, hand stretch the larger dough ball and there is no need to pre-bake.
