Chicken Mediterranean and Brown Rice

Ingredients



    Marinate chicken in baggie with the italian dressing.........30 min to 1 hr.

    serve over BROWN RICE...included in calories is for use with 1/2 cup per serving
    MIXED Veggies...is 1/2 cup per serving and is included in caloric content

    chicken breast, 8 oz
    1 c. onion, chopped
    1/2 c. green pepper, chopped
    4 cloves, garlic, chopped
    olive oil, 2 tbsp to cook above

    After above is browned, add cheese, and broth...just test for thickness and add some seasoning like Dash tomato basil, red pepper flakes, etc.....to taste. Added cut up tomato at the last. Stay clear of salt as much as possible. Add a couple of TBSP of Parmesan. Divide up between 4 servings to freeze, etc. I put the servings into the "steamers" from HC and put the rice and mixed veggies on top and the sauce with chicken on bottom.
