Cheesy Meat Loaf Minis (adapted)

Ingredients

    1/2 cup fresh breadcrumbs
    cooking spray
    1 cup chopped onion
    2 garlic cloves, chopped
    1/2 cup ketchup, divided
    3 oz white cheddar chese or mozzarella, diced
    1/4 cup chopped fresh parsley
    2 tbsp grated parmesan cheese
    1 tbsp dijon mustard
    3/4 tsp dried oregano
    1/4 tsp salt
    1/4 tsp black pepper
    1 1/2 lbs ground sirloin (I used 90% lean)
    1 large egg, lightly beaten

Directions

Can also add 1 tbsp horseradish (I omitted for the kiddos)

NOTE: not sure why the calories are so much higher when I calculate on sparkrecipes.com; Cooking Light puts this at 256 cal per serving, while sparkpeople.com puts it at 341? Maybe I am using the wrong beef? who knows . . . anyway . . .

Preheat oven to 425. Heat a skillet over medium-high heat. Add breadcrumbs; cook 3 min or until toasted, stirring frequently. Heat a large skillet over medium-high heat. Coat with cooking spray. Add onion and garlic; saute 3-4 minutes.

Combine meat, onion mixture, breadcrumbs, 1/4 cup ketchup, and the remaining ingredients. Shape into 6 loaves (about 4x2 inches) on a broiler pan coated with cooking spray. Spread remaining ketchup over the tops of the loaves. Bake at 425 for 25 min or until done.

Makes 6 individual servings.
