Butternut Squash with Ham

Introduction

This is a quick and easy to prepare meal that brings the taste of the holidays any time of year This is a quick and easy to prepare meal that brings the taste of the holidays any time of year
Number of Servings: 4

Ingredients

    6 c. cubed Butternut Squash
    3 sliced Tomatoes (1/2" thick)
    2 sliced Onions (1/8" thick)
    2 tsp Garlic
    1 tsp Pumpkin Pie spice
    2 Tbsp Butter
    4 Slices Extra Lean Ham, (6-1/4" x 4" x 1/16")

Directions

Cut squash into quarters removing all seeds and pulp.
Slice the tomatoes and onions and place in bowl for later use.
Place squash quarters in backing pan meat side down. Cover with tomatoe and onion slices. Sprinkle garlic and pumpkin spice over every thing. Place the four ham slices ontop and place butter in dabs all over the top.

Cover the baking pan and back at 350 for 1.5 or until squash is tender to the fork.
