North African Chicken

Introduction

Found this in the newspaper a few years back and it's EASY and delicious. Found this in the newspaper a few years back and it's EASY and delicious.
Number of Servings: 4

Ingredients

    2 T Olive Oil
    1 med onion, chopped
    1 t each of ground ginger, coriander and cumin
    1/2 t salt
    1/4 t ground red pepper
    1 T honey
    1 (28 oz) can crushed tomatos
    1 lb boneless, skinless chicken breast

Directions

1. Heat olive oil in wide, deep pan over medium high heat. Add onion and cook, stirring occasionally, until golden, about 5 to 10 mins.
2. Add spices, salt, pepper, honey and tomatos. Cook stirring occasionally about 10 mins.
3. As tomatos cook, cut chicken into 1 inch chunks.
4. Add to chicken after sauce has cooked about 10 mins and cook additional 5 to 10 mins til chicken is cooked thru.
5. Serve over couscous or rice.
