good source of vitamin A!! :) I adapted this recipe myself using the red and white bhg book as a basic guide and changing some ingredients and adding to suit my low carb/Atkins lifestyle. Ingredients

    dry ingredients:
    2 cups [zero carb] soy protein [or soy flour or atkins bake mix]
    1 1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teasp;oon cinnamon
    1/8 teaspoon nutmeg
    16 packets splenda [or 1 cup granulated splenda]

    wet ingredients:
    2 eggs, beaten [large]
    1 1/2 cups canned [real] pumpkin [NOT pie filling]
    [or about 2/3 a can 100% real pumpkin]
    1/2 cup heavy cream
    1/2 cup water
    1/2 cup melted real butter

Directions

preheat ovbent to 350 degrees Fahrenheit. Grease a small loaf pan with butter stick and then melt it in a microwave safe dish or measuring cup and reserve for recipe. In a mixing bowl combine all dry ingredients well. In another mixing bowl combine all wet ingredients [this includes the butter you just melted]. add wet to dry. pour into greased loaf pan. Bake for 50 - 60 minutes depending on how hot your oven gets or until no longer wet in center.
Makes 8 large servings/slices.
