You'd never know these muffins use up leftover oatmeal...you wouldn't taste the spinach or the carrots... and they are sweet enough they taste like cake. Number of Servings: 18

Ingredients

    1 c. whole wheat flour
    1/2 c. honey
    1/2 c. brown sugar
    1 tsp. baking powder
    1 tsp. baking soda
    2 tsp. ground cinnamon
    1/2 c. olive oil
    2 large eggs
    1 c. leftover oatmeal
    1 tsp. vanilla extract
    1 raw carrot, grated
    1 handful spinach,(about 2 c) chopped into tiny bits
    1/4 c. walnuts, chopped

Directions

Preheat oven to 350 Degrees F. Combine oil, eggs, sugar and honey. Add vanilla extract. Mush oatmeal until in tiny peices, or beat until broken up. Add to the honey mixture. Add carrots, spinach and walnuts. Add remaining ingredients, and mix well. Fill greased muffin tins about 3/4 full. Bake 20 minutes or until a toothpick comes out clean.
