I'm not a big fan of cooked spinach but I tried this and got raves from my hubby, daughter and son-in-law. AND I'll say it's probably the best cooked spinach I ever had! I used canned tomatoes (drained) and it still turned out ok, but now I can't wait to try it with fresh tomatoes! - 12/17/09

This will be a staple in my diet for a long time coming. Great over rice and can add many other things to it. Leftovers warmed up over rice next day is an easy take to work lunch! - 12/14/09

I loved this. I used red onion, and it was amazing. I had it with an egg, and toast, and made a open face sandwich with it. It was out of this world. It was a big hit at my house. - 9/6/07

I love this recipe. I have made my version many times before but never had added garlic, and I use either spinach or collard greens rolled and cut very thinly. It was awesome. I actually ate 3 servings with my salmon. - 10/7/09

This is good. I think next time I will add some wheat pasta and take the skin off of the tomatoes using the large tomatoes like the recipe. All I had was cherry tomatoes out of the garden. All in all I liked it, thanks for the recipe! - 8/31/09
