Vodka Sauce

Introduction

Number of Servings: 6

Ingredients

    vodka
    half and half
    salt
    light butter
    red pepper flakes
    parmesan cheese
    diced tomatoes

Directions

Melt 1 tablespoon butter (I use light butter w/ canola oil) in pan, add a couple of ounces of vodka and red pepper flakes to taste (1/3tsp makes it spicy, I use just a dash).
Bring to a boil
Add 1 can or so of diced tomatoes, petite cut work well
salt to taste, let simmer for 5 minutes
Add 12oz half and half and 1/4 cup parmesan cheese, bring to just bubbling to melt cheese then turn off heat and let stand 5 minutes to thicken.
Serve over pasta of choice
